Watermelon and Arugula Salad


Serves 6

Dressing:
3 Tbs. white balsamic vinegar
1 tsp. Dijon mustard
1 small shallot, chopped
1/3 cup olive oil
Salad:
6 cups arugula
1 medium cucumber, peeled, seeded and diced
1/2 cup red onion, thinly sliced
2 cups seeded and diced watermelon flesh
3 oz. feta cheese, crumbled
salt and pepper
In a small bowl whisk dressing ingredients until blended.
In a large bowl combine remaining ingredients. Toss with dressing and salt and pepper to taste.
