Avocado and Pineapple Salsa


Makes about 3 cups

zest of 1 lime
zest of 1 orange
1⁄4 cup lime juice
1⁄4 cup orange juice
11⁄2 cups finely chopped pineapple
1⁄4 cup finely chopped red onion
1⁄4 cup finely chopped cilantro
1⁄2 small jalapeno, finely chopped
1 large, ripe avocado, cut into small dice
2 tsp. sugar
1 tsp. salt

Mix together all ingredients. Allow to sit for 20 minutes before serving.
