Mustard-Garlic Vinaigrette


Makes about 3/4 cup

1 tsp. Dijon-style mustard
1 clove garlic, minced (or 1 cube frozen and thawed)
1 tsp. finely chopped parsley (or 1 cube frozen and thawed)
1 Tbs. fresh lemon juice
2 Tbs. red wine vinegar
1/2 olive oil
salt and pepper to taste

In a medium bowl whisk all ingredients together until well blended. Use on your favorite salad greens.
