Message: <br /><br /> If you are having trouble reading this email, you may view this article online at: http://www.jweekly.com/37126/full/37126/lemon-squares/ <br /><br /> <b>Lemon Squares</b> <br /> Wednesday, February 11, 2009 | by <br /><br />Makes 16<br /><br />1/2 cup matzah cake meal<br />1/4 cup potato starch<br />1/4 tsp. salt<br />1/2 cup vegetable oil<br />2/3 cup sugar<br />3 Tbs. finely grated lemon zest<br />3 Tbs. lemon juice<br />1 Tbs. orange juice<br />1/2 cup walnuts, chopped<br />2 large egg whites, lightly beaten<br />4 Tbs. sugar mixed with 1/2 teaspoon cinnamon<br />Preheat oven to 350 degrees. Spray a 9-inch square pan with vegetable spray.<br />Sift cake meal, potato starch and salt together, set aside. In a large bowl of electric mixer, beat oil and sugar together for three minutes. Add lemon zest and sifted dry ingredients alternately with lemon and orange juice. Stir in chopped walnuts with a wooden spoon.<br />In another bowl, beat egg whites until softly peaked. Fold into lemon mixture and blend well. Scrape batter into prepared pan. Bake 25 minutes until set.<br />While hot, cut into 2-inch squares. Sprinkle with cinnamon sugar mixture.
