Sabbath mode is an option on some appliances, like ovens and refrigerators, which basically allows Shabbat-observant people to use those appliances on Shabbat and Yom Tov without inadvertently doing "work" that is forbidden. So like, Sabbath mode overrides the auto-shutoff for ovens (to allow food to stay warm at a low temperature all day) and disables the light in a refrigerator that goes on when you open the door. Some ovens even allow you to change the temperature (on Yom Tov) via a keypad that has a delay before the change is made. I'm still a little skeptical of all these "workarounds" that allow people to do stuff on Shabbat that they really shouldn't do...but I'm not shomer Shabbos, so who am I to judge?
